1 can full-fat coconut milk
5 tbsp chia seeds
1 tsp vanilla extract
1 tbsp maple syrup (or honey or agave syrup)
1/4 cup coconut chips
1/4 cup pumpkin seeds
1 tbsp puffed quinoa
In a mixing bowl, pour in the can of full-fat coconut milk. Add the chia seeds and vanilla extract to the coconut milk. Stir the mixture thoroughly to combine all the ingredients.
Drizzle the maple syrup (or honey or agave syrup) into the chia seed mixture. Stir well to evenly distribute the sweetener throughout the mixture.
Cover the bowl with plastic wrap or a lid and refrigerate the mixture for at least 4 hours or overnight. This allows the chia seeds to absorb the liquid and thicken, creating a pudding-like texture.
Once the chia pudding has set and thickened to your liking, remove it from the refrigerator. Give it a good stir to ensure it's well-mixed and creamy.
Divide the creamy coconut chia pudding into serving bowls, glasses or organic coconut bowls.
Top each serving with kiwi and peach. These fruits add a refreshing tropical touch to your pudding.
Sprinkle each serving with coconut chips, puffed quinoa and pumpkin seeds. These toppings provide a delightful crunch and extra nutritional goodness.
- Feel free to customize your chia pudding with additional toppings like berries, nuts, or a drizzle of more maple syrup if desired.
- I decorated my coconut chia pudding with Healthy Yogurt Chocolates with Cherries.
