Gluten Free Tapioca Crepes

I hope this recipe will inspire you to wake up early on Sunday morning and prepare these magical, delicious and healthy gluten free crepes for your children. I am sure they will be glad and will feel like today's festival.


Ingredients

1/2 cup tapioca flour

1/2 cup apple flour

1 cup milk

2 eggs

1 tbsp erythritol

pinch of salt

1 tsp cinnamon

1 tbsp coconut oil + for greasing

Mix everything in a bowl and stir.

Heat a non-stick pan, greased with coconut oil, over low to medium heat.

Pour a portion of the batter onto the centre of the pan.

Tilt the pan carefully with a circular motion so that the batter coats the surface evenly.

Cover with a lid.

Cook the crepe for about 4-5 minutes, until the bottom is light brown.

Loosen with a spatula, turn and cook the other side.

Serve the crepes with yogurt, decorate with blueberries and blackberries, any fruits of your choice or Healthy Yogurt Chocolates with Cherries.
Tip:
- If you don't have apple flour, you can make your own apple flour by dehydrating apples and blending them into a fine powder.
- For toppings you can add any fresh seasonal fruits, cream, chocolate spread, tahini, nut butter of your choice.
Note:
- For the cream, I combine coconut yogurt with pink dragon fruit powder and little bit of maple syrup. I spread some melted dark chocolate and sprinkle with puffed quinoa.
