Healthy Bubble Tea

Hello friends! Oh wow, the obsession with a bubble tea reach my food blog. My version, of course, is healthier than the classic recipe, which has a huge amount of sugar. The recipe is vegan, sugar free, gluten free and has no artificial colors.





Ingredients

FOR WHITE COLOR BUBBLE TEA:

1 tbsp tapioca flour

1 tbsp erythritol

1 tbsp orange juice

FOR YELLOW COLOR BUBBLE TEA:

1 tbsp tapioca flour
-
1 tbsp erythritol
-
1 tbsp orange juice

1 tsp turmeric powder

FOR GREEN COLOR BUBBLE TEA:

1 tbsp tapioca flour
-
1 tbsp erythritol
-
1 tbsp orange juice
-
1 tsp green detox mix (moringa or spirulina powder)

BASIC:

6 tbsp tapioca flour
-
1 tbsp maple syrup (or agave syrup)

2 tea bags ceylon black tea (earl gray or English breakfast)

1 cup vegan milk

Combine the ingredients in different bowls for each color.

Put each bowl on the stove using a double boiler (or in a microwave). Stir.

Once a sticky consistency is obtained, remove it from the heat.

Add 2 tbsp tapioca flour to each bowl. Mix. Knead the dough until it becomes elastic.

Make the tapioca pearls from the dough.

Boil the tapioca pearls for about 20-25 minutes. They should be semi-transparent, elastic and soft.

Boil the black tea of your choice in 1 cup of water and milk. Let it simmer for about 10 min.

Serve the pears in a glass and pour the black tea.
