Keto Blueberry Muffins
Blogmas Day 15 ...
2 cups almond flour
1 tsp baking powder
1 tsp vanilla
1/4 cup erythritol powder + 1 tbsp for coating
2 tbsp coconut oil, melted
zest of 1 lemon
150 g (5 oz) blueberries
Preheat the oven to 160 C (320F) degrees.
Beat the eggs, erythritol, vanilla, lemon zest and coconut oil with a hand mixer.
Coat the blueberries with 1 tbsp erythritol powder Mix the dry and the wet ingredients. Stir.
Pour the batter into a muffin tin. Bake for about 20 minutes.
