Muskmelon Boats with Homemade Granola

I tried the food boats trend with papaya but instead papaya I did it with muskmelon. I couldn't find papaya but basically you can use melon, mango, avocado etc to make the boats.


Ingredients

  • 2 cup rolled oats
  • 1 tsp cinnamon
  • 3 tbsp honey
  • 2 tbsp coconut oil
  • 1/4 cup (30 g) mixed nuts (raw)
  • 1/4 cup (30 g) raisins
  • 1/4 cup (30 g) dried cherries
  • 1 muskmelon
  • 3 tbsp vegan yogurt
  • toppings: fresh fruits of your choice

Preheat the oven at 160 C (320 F) degrees with a fan.

Melt the coconut oil. Pour the oats into a bowl, add coconut oil, honey, cinnamon and the nuts. Stir.

Spread the granola evenly on a tray covered with baking paper.

Bake the granola for about 5-7 min or until golden brown. Stir frequently.

When the granola is completely done, add raisins and dried cherries.

Let it cool down. Store in a tightly closed container for up to 7 days.

Cut the muskmelon in half, add vegan yoghurt, granola and fresh fruits.
