Overnight Oats with Peaches

I'm obsessed with any type of porridge for breakfast. I can tell that the peach and mango are my favourite fruits ever. The combination is not something that you can see very often but I love it. I hope you can give it a try.

Ingredients

  • 3/4 cup porridge oats
  • 1 cup greek yoghurt
  • 2 peaches (or 1 big mango)
  • 1 tbsp maple syrup (honey or agave syrup)
  • 2 tsp mango powder
  • 1/4 cup puffed quinoa

Soak the oats with the greek yoghurt overnight.

The next morning combine the overnight oats with the honey.

Add the mango powder for flavour. Mix well.

Cut one of the peaches into thin slices. Peel the skin of the second peach and dice it.

Assemble the breakfast. At the bottom of two cups pour the puffed quinoa. Add the sliced peach. Pour the overnight oats and add the diced peach.

Decorate with puffed quinoa and mint leaves.

Note:

  • I didn't find a good mango so I use peaches because they were seasonal.
