Ingredients

  • 500 ml almond milk
  • 40 ml coconut oil, melted + for greasing
  • 200 g organic pancake mix Bettr
  • 3 tbsp vegan cream cheese, at room temperature
  • 1 tbsp erythritol (or sweetener of your choice)
  • pomegranate seeds
  • 6 chocolate drops
  • 1 carrot
  • For the hands:
  • 3 tbsp vegan cream cheese, at room temperature
  • 2 tbsp erythritol (or sweetener of your choice)
  • 1 tbsp cocoa powder
  • 2 tbsp coconut oil, melted

In a bowl, combine pancake mix, almond milk and coconut oil.

Turn on the stove to medium heat. Grease the pan with coconut oil.

Pour the batter into the pan. Bake them on each side under a lid.

For the snowflakes, combine vegan cream cheese with sweetener and stir. Pour into a bag or freezer bag. Cut the edge of the bag.

Make the snowman's body from 3 pancakes.

Make the eyes and buttons from chocolate drops.

For the mouth use some of the pomegranate seeds.

Make the nose from a small piece of carrot.

Make the hands combining melted coconut oil with cocoa powder, erythritol and vegan cream cheese.
