The best Coconut Chia Pudding

This recipe has healthy fats from the chia and the coconut milk. It's high in protein from the pumpkin seeds. It's full with vitamins from the kiwi and the peach. It's super creamy, smooth and delicious. I'm sure you're going to love this breakfast bowl.

Ingredients

  • 1 can coconut milk, full fat
  • 5 tbsp chia seeds
  • 1 tsp vanilla
  • 1 tbsp maple syrup (honey or agave syrup)
  • 1 kiwi
  • 1 peach
  • 1/4 cup coconut chips
  • 1/4 cup pumpkin seeds

In a bowl, combine chia seeds, 1 tbsp maple syrup, vanilla and coconut full fat milk. Soak overnight.

The next morning peel and cup the kiwi and peach.

Serve the chia pudding in a organic coconut bowl.

Decorate with coconut chips, pumpkin seeds, kiwi and peach and Healthy Yogurt Chocolates with Cherries.
