    Once soaked, remove the skin and pit from the Medjool dates. Mash them with a fork until you achieve a smooth consistency.

    In a mixing bowl, combine the mashed Medjool dates with the fresh grated coconut flakes. Stir well until the dates and coconut are thoroughly mixed together.

Tips

If you want to replace the flakes in this recipe with coconut flakes from a package, I recommend adding coconut oil or coconut milk / cream.
  • If you prefer a chewier texture, you can slightly underbake the cookies.
