Instructions

  • 1

    Prep the Oats:

    • The night before, combine the porridge oats, Greek yogurt (or coconut yogurt), and maple syrup in a large bowl. Stir well to ensure the oats are well-coated. Allow the mixture to soak overnight in the refrigerator.

  • 2

    Divide the Oats:

    • In the morning, divide the overnight oat mixture evenly into three separate bowls, creating the base for your colorful layers.

  • 3

    Create the Pink Layer:

    • In the first bowl, add the dragon fruit powder to the oats. Mix thoroughly until you achieve a vibrant pink color. This will be one of your colorful layers.

  • 4

    Prepare the Blue Layer:

    • In the second bowl, incorporate the blue spirulina powder into the oats and stir well. This will create a beautiful blue layer.

  • 5

    Make the Purple Layer:

    • In the third bowl, you can add butterfly pea powder to the oats if you wish to create a purple layer. Mix until you reach the desired color.

  • 6

    Assemble in Cups or Jars:

    • Begin by adding a layer of puffed quinoa at the bottom of each serving cup or jar. This will add a delightful crunch to your breakfast.

  • 7

    Layer the Oats:

    • Pour each of the colorful oatmeal mixtures into the cups, creating distinct layers. You can alternate between the pink, blue, and purple layers, allowing the vibrant colors to shine through.

  • 8

    Decorate:

    • Top your layered oats with fresh blueberries, blackberries, or any fruits of your choice. The addition of colorful fruits enhances the unicorn effect. For an extra touch of indulgence, you can also add Healthy Yogurt Chocolates with Cherries as a delightful garnish.

  • 9

    Serve and Enjoy:

    • Your Unicorn Overnight Oats are now ready to be enjoyed. This visually appealing and delicious breakfast is not only a treat for the taste buds but also a feast for the eyes. Savor each layer and the burst of flavors they offer.

If you prefer, before making the layers, you can dip the empty cups in melted chocolate (just for fun) and let them freeze for 15-20 min.
